Classic Bellini

Summer is truly here when fresh local fruit appears for sale. With fresh peaches comes the opportunity to enjoy a perfect patio sipper, the Peach Bellini. The classic Bellini is simple; fresh peaches and sparkling wine.
Champagne was used originally, but today, we recommend a wonderful, dry Prosecco from the sparkling wine section of our shop. The fresh fruit flavours of the Prosecco will complement the peaches combined with a low ABV.

Materials

  • 1 Bottle Prosecco Dry is preferred
  • Fresh peaches
  • Mint for garnish

Instructions

  • Peel and cube the peaches, add to blender and puree to a smooth consistency.
  • Strain the peach puree & chill for 2 hours.
  • Take a champagne flute & fill 1/3 with peach puree & fill the top 2/3 with Prosecco. (A classic Belinni is 2 parts Prosecco and 1 part fresh fruit so keep that in mind if you are making the cocktail in another kind of glass.)
  • Stir slightly & enjoy!

Notes

  • The key is to chill both ingredients as cold as possible without freezing. I have had good success placing both items in the freezer for 20 minutes just prior to serving.
  • For a sweeter cocktail, use white peaches or, on the other end of the spectrum, add a teaspoon of lemon juice to the puree to reduce sweetness.
  • To eliminate the alcohol, simply replace the sparkling wine with sparkling water.
