Gone Fishing Sherry Cocktail

In North America, we tend to think of Sherry as a simple and sweet after-dinner sipper for Granny that comes in a dark green bottle. In Spain, Sherry is produced in a wide range of styles and flavour profiles, used in cocktails, served with ice as an aperitif and paired with pasta. This little number by Stephanie Schneider, Brooklyn, NY via the sherry.wine website is an example of using Fino style Sherry as a fine cocktail base. Refreshing!

Materials

  • 2 oz Fino Sherry Pick your favourite
  • 1 oz A floral, fruit-forward Gin See notes
  • 3/4 oz Apricot Syrup See notes for recipe link
  • 1/2 oz Orgeat Buy it or make it
  • 1/2 oz Fresh lemon juice Fresh is always best!
  • Orange peel for garnish

Instructions

  • Combine all ingredients in a shaker. Add ice and shake.
  • Strain into a highball glass over fresh ice & garnish.

Notes

  • Fino Sherry is a light-coloured, tangy wine with notes of almonds that is fermented entirely under a layer of flor, a cap of yeast that protects the wine from contact with the air for the duration of fermentation.
  • Recomended floral and fruit-forward gins include Citidelle, Tanqueray No. Ten and Sheringham Distillery’s Kuzuki.
  • You can purchase Orgeat on Amazon or make your own.
  • Buy syrup or enjoy homemade apricot syrup.
