Matt Piacentini’s Sherry Daiquiri

This is a nutty variation of a Daiquiri that features Oloroso sherry and rich demerara sugar syrup. It is a perfect way to learn more about sherry and all the lovely ways it can be enjoyed. Try with Gonzalez Byass Nutty Solera from our shop! Image by Punch Drink.

Materials

  • 2 oz White Rum
  • 1/2 oz Demerara syrup*
  • 3/4 oz Lime juice
  • 1/2 oz Oloroso sherry
  • Lime wheel for garnish

Instructions

  • In a cocktail shaker combine all ingredients with ice and shake well.
  • Strain into a chilled coupe glass and garnish with a lime wheel.

Notes

* Demerara syrup is a 2 to 1 solution of sugar to water. This thicker syrup gives cocktail greater viscosity and a luxurious mouthfeel.
  • Heat water in a small saucepan, add sugar and boil for 1 to 2 minutes. This can be stored in a closed container in the fridge for 2 to 3 weeks.
  • There is also a cold method that will keep a lovely, thick mouthfeel: Mix sugar and water in a container with a tight lid and shake. The sugar will need about 45 minutes to dissolve. Give it a shake about halfway through that time. Storage is the same.
